Tenderloin steak with gorgonzola sauce (4 persons)

Ingredients:
- 400g tenderloin steak
- 3 shallots
- 1 clove of garlic
- 150g gorgonzola
- 250g mange-tout
- 2.5dl whipping cream
- 2tbsp oil
- pepper and salt
Preparation:
- Peel the shallots and cut into strips.
- Peel the clove of garlic and press it.
- Cut the gorgonzola into small cubes.
- Cook the mange-tout in a pan with salted boiling water for ± 3-4 minutes until 'al dente'. Rinse the mange-tout with cold water and allow them to drain.
- Dab the tenderloin dry with kitchen towel and sprinkle it with pepper.
- In a saucepan, bring the cream to a boil and melt the gorgonzola into it over a low flame. Keep the sauce warm over a low flame.
- Heat the oil in a wok and gently stir-fry the shallots and garlic for ± 3 minutes. Add the mange-tout and stir-fry for one minute.
- Cook the tenderloin in a pan for 6 to 8 minutes.
- On each plate, put one tenderloin steak and pour the gorgonzola sauce over the meat.
Delicious with spaghetti.
